RIP: Tributes paid to Tipperary woman (98) who baked fabulous apple tarts

A tribute to Josephine Cahill - 27/4/1923 to 13/12/2024
Josephine Cahill née Burke hailed from Poulacapple, county Tipperary.
She lived for 60 years at Lisbalting, Kilsheelan and spent nine happy years in St Joseph's Assisted Living facility in Kilmoganny, county Kilkenny.
Josephine had two sisters and four brothers. They were farmers with a huge interest in sport, especially hurling. They were all blessed with excellent health and energy and lived to great ages.
Josephine worked in business in Thurles prior to her marriage and attended the Mercy Convent in Callan. She was a fluent Irish speaker thanks to an excellent primary teacher in Poulacapple.
She met David Cahill when dancing in the Collins Hall, Clonmel.
They both shared a passion for music and dancing, in particular Strauss' waltzes, Mario Lanza and Richard Tauber.
They were blessed with six children and farmed and raised their family in Lisbalting.
Josephine loved farming, in particular animal husbandry caring for calves and lambs and feeding chickens.
Their home had an open door policy where neighbours, relatives and friends could just drop in and work often paused or stopped completely for tea making and food provision for everyone.
Josephine baked fabulous apple tarts from their ten acre orchard which David had planted in the 50s. She was equally happy in the home or in the field.
Josephine has eight grandchildren of which she was very proud and ten lovely grandchildren who were all actively involved in the celebration of her 98 years of healthy living.
She was blessed with excellent health for which she was eternally grateful.
Josephine's family are grateful to the staff at St Luke's Hospital, Kilkenny where she spent ten days and to all the staff and residents in St Joseph's Kilmoganny.
The family are grateful to neighbours, relatives and friends who attended Josephine's removal and burial.
