Coffee for Palestine to help “humanitarian crisis,” says Simple Simons organiser

Several Donegal cafes are taking part in Coffee for Palestine
Donegal Town’s Simple Simons organiser, Toni Rock Hubbard, told Donegal Live that one of the reasons the popular cafe took part in Coffee for Palestine was because ethics were important to them.
Simple Simons was one of over 250 cafes nationwide to participate in the fundraiser during the week of June 23 to June 29.
Other Donegal businesses to take part in the fundraiser were The Salty Fox, Foam, and Buoys & Gulls in Bundoran, Nancy’s in Ardara, and The Blue Goat in Ramelton.
Toni explained: “This began in 2024. It was organised by a group of cafes and independent businesses joining together. We can all feel very small, but when we join together and pool our resources effectively, it can be much greater.
“Last year, they raised over €50,000, and we hope to beat that this year.
“We have always liked to class ourselves as being concerned with fair trade and zero waste, etc. Ethics is important to us, and this is a very clear humanitarian crisis and genocide that we can react to.
“The idea of this is that we as businesses are donating the value of 10 coffees a day for one week, and if customers want to support, they can support through an online link, or we have a docket which they can donate extra to.”
Toni also gave a special mention to Ballybofey-based coffee supplier, Paddy McMenamin of The Hatter Express.
She said: “He was very generous and he donated to this fundraiser when he heard about it.”
